Morisca: An olive resistant to drought, it is produced by a tree which is not very fertile as it only yields a good harvest on alternate years. Its fruit has a high fat output and produces a fruity oil which is sweet and fluid in the mouth.
Manzanilla from Seville or Carrasqueña: This is a very productive olive tree which bears fruit early. The tree is fragile so harvesting must be done by hand. It produces a sharp, slightly bitter oil with a hint of grass.
Verdial from Badajoz: The tree adapts well to poor soil and can withstand periods of drought though it is very sensitive to the cold. It produces a top quality fruity oil with an almond tone.
